DSC_0549It’s almost Christmas and also the end to another fantastic year. Although I don’t celebrate Christmas I do make all kind of Christmas-y treats. I’ve made some cookies and gingerbread men, fruit mince pies and the list goes on… what kind of sweet treats did you make for Christmas this year?!

DSC_0505I’ve cooked and baked so much this year and learnt a whole lot of things along the way. I’ve catered for occasions, like making cupcakes for a friends birthday party, cookies for haloween and brownies on request for a very close friend (she is addicted to brownies!)

Vanilla and almond chocolate chip cookies

DSC_0254I’ve been experimenting with cookies, trying to find the right texture between crunchy and soft and the right balance of sweetness. I’ve tried peanut butter cookies, oatmeal cookies, carrot cookies and these chocolate chip cookies. Yep, lots of cookies!
I tried these cookies yesterday and they are surprisingly good. They are vegan, healthy one bowl recipe (how good is that!?)- BUT WAIT– they only have 2 1/2 tbsp of oil and 2 tbsp of honey (I know…that is ludicrous!) but they taste like any other cookie or maybe even better…

Lemon sheet cake with blueberry and coconut whipped cream

DSC_0156This recipe has been kept in my drafts folder for a while now, waiting for the best time to be published. I made this recipe on Sunday- my day in the kitchen- and I really craved a really tangy and light lemon cake, you know, the one with the ridiculous amount of layers of airy cake and whipped cream… the one tried and tested recipe that has been carefully written in my recipe book and the one recipe laden with eggs, butter and sugar and not so very vegan…

So it was a bright and sunny Sunday morning and I decided to re-create this lemon recipe into something vegan and healthy. I’ve still been eating and cooking vegan, if you read my previous post, which is a super plus!

Coconut, cranberry and pecan cookies and cooking vegan

DSC_0085I’ve began to start eating and cooking vegan these past few months due to some digestion issues. I have began to feel healthier and brighter as a result… I’m happy to announce that I have been vegan for two months now and it literally is really easy to eliminate any animal products from my diet.

I’m not really a big fan of meat, so it was easy to forget about that but milk and eggs were a tiny issue as I love sweet food.
