DSC_0470I’m a big caramel person. I love all things caramel (don’t get me started on caramel cake!). So when I first tried this recipe I was in love, love at first bite. It’s sweet and rich, and not like those watery under-cooked caramel sauces. It was just perfect.

So here it is, a simple caramel sauce that can be used to glam up pretty much any dessert. I always place a little jar in the back of my fridge so I’m always prepared whenever the craving strikes.

Chocolate & peanut butter molten lava cakes

DSC_0037I know what you’re thinking. How on Earth can something so sinful be healthy and vegan? I know, I thought the same thing when I took by first spoonful. Complete and utter heaven in my mouth.

I didn’t really expect the recipe to work. It was one of those “you know I’m not really bothered to measure or to whip out my recipe book but I’ll just mix some stuff together and pray to the baking god’s that it works” And boy, did it work!

Hazelnut and vanilla caramel sandwich cookies

DSC_0642It’s 2014, I hope you had an awesome new year! Some of you might say finally and others might be wide-eyed and shocked at the thought of an end to 2013. For me, it’s a bit of both. 2013 was a bit tough on me but it went so fast at the same time.
